How do you charge for service, all at once, or in smaller chunks?

If you are asking if we have different billing cycles, the answer is yes. You can sign up for an account and pay quarterly, yearly or bi-yearly. :)

Anytime you add an additional service, it will be charged in one charge.

I'm sorry, I don't understand what you meant to say. Could you please clarify what you meant when you said "charged in on charge"? Does this mean that when additional services are requested they will be charged at that time to the credit card that is kept on file for this purpose?
