Anyone know the trick to remove/prevent those unsightly white edges I'm getting around my gif images on transparent backgrounds? ...a little too much bleach?

You can choose which matte color you wish to use in your image editing program (at least you can in Photoshop).
It's a limitation with transparent GIFs, because it tries to fade out the edges. You can try and choose none, but it still makes the edges harsh.
Transparent PNG's dont have that issue, but Internet Explorer's support of transparent PNG's is limited, if there is any at all.
If it is absolutely critical to have smooth blending, you could use transparent PNG's along with IE7 (http://dean.edwards.name/IE7/) to force IE to use transparent pngs (it works, but caveat emptor :))

Thank you Nate for lifting me out of the hack realm.
I made the Matte color the same as the body of the cow. Now I'll do the same for the others. :)

you may also need to play around with your dither settings, while this wont always help you find an exact smooth transition you may find something much better than what you are stuck with right now.
