I have the latest version of MIcrosoft Word.
Under "File," there is "Recent Documents." It seems like every 2 days, Word refreshes "Recent Documents."
Is there a way that I can set Word to not refresh "Recent Documents?"

There's no 'file' menu in word 2007 :)
it keeps a list of the documents you used most recently...if you dont use Word for 2 days, the list of recent documents should be the same. If you open up different files, that changes the recent files until they fall of the list or are reopened.
You can change the # of displayed documents in options/advanced

For example, I will open 2 Word files. Then for the next 4-5 days, I will open 0 Word files. When I reopen Word after those 4-5 days, the 2 files that were listed in "Recent Documents" are now no longer listed.
Is there an option where I can stop Word from clearing out "Recent Documents?" (if such option even exists)
Any ideas?

that doesnt happen to me. I have word 2007 installed on a laptop that I use 2003 on most of the time. the only document I ever opened in 2007, two weeks ago, is still in the recent documents list. I've never heard of word clearing out the recent documents, only replacing the entries with more recently opened ones.
Might try a Google search for your problem, sammie. There's most likely someone else having the same problem or Microsoft may have something on their site.

are you running any kind of spyware scan? Spybot S&D will call recently used filelists a problem and give you the option to clear them.

That is it. The spyware scan deletes the file that stores the history for Word.
