Does anyone know how to insert a "page break" / "section break" in the header of a letter in Word 2007?

why? inserting a page break in the header would just leave a blank page...

oops, I mean a "line" to split the header with the body

If you mean a drawing line...
I don't have 2007 here, but on Word XP (aka 2002) you can use the drawing tool (from the drawing toolbar - <<view>><<toolbar>><<drawing>> ) to insert a line (or anything) into the header via <<view>><<header and footer>> from the menus. You may need to do a manual resize (I did) but it creates what you wish in the header.

putting in 3 underscores or dashes, then hitting enter, will create a line from left to right margin. dashes creates a thin line, underscores a thicker line. this is true in all versions I know of...
to do as Ian suggests, go to the insert tab, then select a line shape.
